Yeast Hamburger Buns

  • 1 cup water
  • 1 TBSP Dry Active Yeast
  • 1 tsp of real honey (this doesn’t get added to carb count, as it is eaten by the yeast)
  • 3 TBSP Granulated Swerve
  • 2 eggs, slightly beaten, room temperature
  • 1/2 Cup Oat Fiber
  • 2/3 Cup Ground Golden Flax Meal
  • 1 1/4 Cup Vital Wheat Gluten
  • 1/2 tsp of Xanthum Gum
  • 1 tsp salt
  • 2 TBSP softened butter


  1. Warm the oven to 170F and place a pan of water in for humidity while proofing.
  2. Place warm water (100- 110 F) in your mixing bowl
  3. Pour your honey into the water and mix it around so it dissolves
  4. Add your yeast into the honey water and stir it around
  5. Add in your remaining ingredients in the order listed above
  6. Mix in stand mixer with hook attachment for 15 minutes.
  7. Turn the oven off while the dough is mixing/kneading.
  8. Cover a baking sheet with parchment paper. Divide your dough into 7 equal pieces and gently form rolls. Cover with oven-safe plastic wrap that has been sprayed with non-stick spray.
  9. Proof in the oven for 30 minutes until dough has doubled in size. Make sure the oven it off before putting the buns in. Remove from oven and preheat to 375.
  10. Bake for 20 minutes at 375 degrees.
