Cheddar Cheese Soup

Makes 3 servings

Calories: 314; Fat: 30g; Total Carbs: 1g; Fiber: 0g; Net Carbs: 1g; Protein: 10g

Ingredients:

  • 2 TBSP Butter
  • 1 TBSP diced onion
  • ½ tsp onion powder
  • 2 cups chicken broth
  • 1 TBSP Philadelphia Cream Cheese
  • 1/3 cup Heavy Cream
  • ½ tsp Xanthum Gum
  • 1 cup shredded Cheddar Cheese
  • Salt and Pepper to taste

Directions:

  1. In a large pot melt butter over medium high heat.
  2. Add in diced onion and garlic powder. Cook until onions are translucent.
  3. Add in chicken broth and bring to a boil.
  4. In a microwave safe dish melt cream cheese and add in heavy cream.
  5. Pour the cream cheese and heavy cream into the chicken broth.
  6. Return to a boil and stir in Xanthum Gum.
  7. Boil for 60 seconds then turn off the heat.
  8. Add in shredded cheese and stir until melted.
  9. Taste and add salt and pepper if needed.

Makes 3 1-cup servings!

You could add in some cooked broccoli and let it boil in with the stock to soften. This will increase the carb count.
